I use a blend of whole wheat flour and a bit of cornstarch instead of whole wheat pastry flour, feel free to use the pastry flour, or to substitute cornstarch with rice flour (also 'soft').
love the pic! and enjoyed the book, have got another of his books 'black swan green' on my to be read pile..which just keeps getting bigger..cant resist books with a one pound price tag :-)
